Jambalaya was written and recorded by Hank Williams on MGM Records (MGM 11283) in 1952. His recording hit the top of Billboard's country chart and #23 on the Best-Selling Singles chart. Jo Stafford's recording (Columbia 39838) peaked at #3. Both records sold over a million copies. Jambalaya (subtitled On The Bayou) has been recorded by many artists over the years. Even Fats Domino (Imperial 5796) charted (#30) with the song in 1962.

Elvis sang Jambalaya at a concert in Louisiana in May or June 1975. The city was either Monroe, Lake Charles or Shreveport.
